The study was to analyze aroma patterns of Panax species (Panax ginseng C.A. Meyer, Panax quinquefolium L, Panax notoginseng EH. Chen) using an electronic nose with 32 conducting polymer sensors. Responses of the electronic nose were analyzed by the principal component analysis (PCA). The intensity of aroma in the electronic nose was the highest in Panax ginseng. All values of quality factor (QF) obtained through PCA using normalized patterns of 32 sensors were more than 2 except the value between Panax quinquefolium and Panax notoginseng, suggesting that aroma patterns of Panax species can be discriminated. Sensor intensities of Panax species pastes containing 70% moisture content were higher than those of powdered Panax species. However, aroma patterns of Panax species pastes containing 70% moisture were not discriminated. When PCA was performed using normalized patterns of selected 8 sensitive sensors in powdered Panax species, QFs between Panax ginseng and Panax quinquefolium, and between Panax ginseng and Panax notoginseng were 3.063 and 3.954, respectively, and QF between Panax quinquefolium and Panax notoginseng was close to 2. Thus, the electronic nose was remarkable in discriminating aroma patterns of the powdered Panax species.
